This year, I decided to try something different. I have cooked a lot of turkey over the years. Instead of making a traditional turkey video, I decided to try one in my Alfa 4 Pizze wood-fired oven.

Wood-Fired Flavor

This was a 12-pound turkey, and since it would take a few hours to cook, I kept it covered for the first 2 hours. Once it hit around 145F in the breasts, I removed the aluminum foil and let the flames go to work.

Rotate Quick

I burned a medium-sized fire, and I transferred the turkey to a pan with a low profile. This allowed all sides to get exposed to the flames. I rotated it about every minute to help prevent burning.
