8 BBQ Side Dishes Including Potatoes And Vegetables
It Can’t be all Meat for Dinner!
BBQ Sides
It's a must-have for a complete dinner. There are 8 in the video, but I’ll list my favorites below.
Ingredients
- Potatoes (preferably russet for twice baked) 
- Olive oil 
- Salt (preferably kosher or flavored) 
- Bacon 
- Cheddar cheese 
- Green onions 
- Onion (red and white) 
- Butter 
- Smoked paprika 
- Aged balsamic vinegar 
- Rosemary (fresh or crushed) 
- Corn on the cob 
- Bell peppers (various colors) 
- Zucchini 
- Squash 
- Asparagus 
Instructions
Bacon Bit Hack:
- Cut frozen bacon into small slices across the width of a package. Use a bread knife to make it easier. 
- Simmer until they break apart and become crispy (about 5 minutes). 
Twice Baked Potatoes:
- Preheat the grill to around 400°F (205°C). 
- Soak the potatoes in salted water to create a salty skin flavor. 
- Prick the potatoes with a fork and let them soak for a few minutes. 
- Rub olive oil on the potatoes and sprinkle with salt. 
- Grill the potatoes until the skin is crispy and the inside is soft (about 1 hour and 15 minutes). 
- Cut off the potatoes' top and scoop the insides into a bowl. 
- Mix in butter, cheddar cheese, green onions, bacon bits, sautéed onions, salt, and pepper. 
- Scoop the mixture back into the potato skins and sprinkle with smoked paprika. 
- Grill for an additional 15-20 minutes until the top is golden. 
Grilled Vegetables:
- Clean and cut various bell peppers, zucchini, and squash. 
- Skewer the vegetables onto bamboo skewers or use a grilling basket. 
- Season with olive oil, salt, pepper, and crushed Rosemary. 
- Grill over medium heat for about 10 minutes, turning occasionally until they are charred and tender. 
Grilled Corn on the Cob:
- Remove the husks and silk from the corn. 
- Cut off any straggling parts. 
- Grill the corn on medium heat for 5-10 minutes, turning occasionally. 
Grilled Asparagus:
- Trim the woody ends of the asparagus. 
- Season with olive oil, salt, pepper, and Rosemary. 
- Grill for 3-4 minutes until tender but still crisp. 
Grilled Onion:
- Cut onions into wedges. 
- Season with olive oil, salt, and fresh cracked pepper. 
- Grill over medium-low heat until caramelized (8-10 minutes). 
Serving
- Serve the grilled vegetables, corn, asparagus, onion, and twice-baked potatoes together for a delicious and colorful BBQ feast.
